Hayes I like using the YSlow plugin for Firebug(links in the post).

This will let me see exactly how long each file takes to load to the millisecond, the order they load, and where exactly the page hangs. It is great for troubleshooting slow pages, or just optimizing pages.

And boo on changing the header, but I do like grungy looking websites.

An easy way to tell whats slowing you down is to watch your status bar while your site is loading. See what's loading, and if it's something you don't need then trash it! I tried this with my site, and I had a ton of trackers on my site like "Blogtoplist" and "BlogRankings" that were slowing my site down. Got rid of them and now I'm a heck of lot faster. O and sorry that you liked my header on my site...I switched themes. =)

PS. nice hover effect on your content.

You are totally correct, and you should know. Thanks for the great plug-in!

The extra files I was talking about were actually extra css and javascript files that I didn't really need loading, but they have been compressed now, so they aren't an issue.

As you have Super Cache enabled you don't need to worry so much about a few plugins loading extra files. A majority of your visitors will see a static html file where no PHP Is loaded at all!
